With sweet potato crust.
This summer, my Nana made a quiche with “surprise” crust. She wouldn’t tell us what it was until we ate it, since some members of my extended family are afraid to eat things that are gluten free! I know the label can be scary, but rest assured, gluten free does not mean tasteless, as this savory, cheesy fare proves.
My mom does not usually make quiche because some of her children do not enjoy egg-y dishes, but when Nana’s quiche was so well-received, she was inspired to re-create the dish at home.
In addition to being gluten free, this dish is flourless, nut free, sugar free, and soy free. It contains dairy and eggs.
Ingredients:
1 Sweet potato, peeled and sliced
4 Tablespoons butter
1 onion minced
1 teaspoon garlic minced
1 ½ cup diced ham
1 cup broccoli
1 ½ cup shredded cheese
1 cup milk
4 eggs
½ teaspoon pepper
For the crust, line a 10-inch pie plate with sliced sweet potato.
Sauté the butter, onion, and garlic in a skillet for about 5 minutes.
Add ham and broccoli, sauté briefly and transfer to pie crust.
In a separate bowl, beat together cheese, milk, eggs, and pepper.
Pour over ham mixture in pie plate.
Bake at 350° for 30-45 minutes.
